I'm always interested in others experience, and as I'm about to get some new mud terrains (16x205 or 225) I'm looking for tips. I usually go for BFGoodrichs as I need extreme capabilities. But is there something better? Do tell!

how much do wanna spend and what kind of terrain. I use BFG MT 33x12.50 for general and boggy peat ground and simex 34x10.50 for clay and extreme off road.

Apologises if I’m stating the obvious but…………..If the trailer does want to overtake you when going down hill (not funny!). You need to accelerate(slightly), which is not what your brain will want to do in these circumstances.

I need to stick to my rim sizes Peter, so 16" with a 205 or 225 is about right. It needs to be road legal but VERY capable in deep mud. I have to tow trailers loaded with hay into boggy and often steep fields. BF Goodriches will do this, but I still skate about even with the difflocks in - remember I have a trailer on too!
I've avoided downhill jackknifes by the skin of my teeth twice, as the trailer tends to push the back end when descending.
Yes, I could be sensible and not do this in the first place, but G's are such good fun aren't they!
